Equipment

  • Yogurt container or small bowl
  • Spoon
  • Plastic wrap (if needed)

Ingredients

  • 1 container Full-fat Greek yogurt
  • 1 package Biscoff cookies or Coconut Sablé cookies
  • Fruit compote (optional)
  • Extra cookies (optional for garnish)

Instructions

Prep the Yogurt Base

  • Open the Greek yogurt container and remove a few tablespoons of yogurt if it is filled to the brim to make room for the cookies.
  • Stir the yogurt thoroughly until it is smooth and glossy, making sure to incorporate any liquid whey on top.

Build the Cookie Cake Inside the Tub

  • Hold each cookie vertically and press it down into the yogurt like you are slotting cards into a deck, ensuring they stay mostly submerged.
  • Pack the cookies snugly together until the entire surface is filled and there are no large gaps.

Chill and Let the Texture Transform

  • Reseal the container with the original lid or cover it tightly with plastic wrap to prevent the surface from drying out.
  • Refrigerate for a minimum of 4 to 6 hours, though 8 to 12 hours (overnight) is recommended for a perfect sponge cake texture.

Serve and Finish

  • Spoon the cheesecake into a bowl or serve it directly from the container for a simple treat.
  • Garnish with fruit compote or extra crumbled cookies on top for added luxury and contrast.

Notes

Texture Tip: For a satisfying snap against the creamy center, leave about 1cm of the cookie peeking out above the yogurt surface.
Flavor Upgrade: Stir in some lemon zest or vanilla bean paste before adding the cookies to give the dessert a brighter, classic cheesecake profile.
Ingredient Selection: Avoid using non-fat or regular non-Greek yogurt. The fat content in Greek yogurt or Skyr provides the necessary structure to turn cookies into cake.
