Equipment

  • 9x13 Baking Dish

Ingredients

  • 1.5 - 2 lbs boneless skinless chicken breasts or thighs (slice breasts in half lengthwise if thick)
  • salt and pepper
  • 1 (8 ounce) package cream cheese, room temperature
  • 2 tablespoons milk or cream
  • 1/2 teaspoon garlic powder
  • 2-3 jalapeno peppers (seeded and diced, about 1/2 cup)
  • 1/2 cup cooked and crumbled bacon (about 6 slices)
  • 1 cup shredded cheddar cheese (or mix of cheddar)

Instructions

  • Heat the oven to 350°F and grease a 9x13 baking dish. The dish should be ready before the chicken goes in so nothing sticks as the cheese melts.
  • Arrange the chicken in a single layer in the baking dish and season it well with salt and pepper. Leave a little space between pieces so the chicken bakes evenly instead of steaming.
  • Stir the cream cheese, milk or cream, and garlic powder in a small bowl until smooth and spreadable, warming it briefly if needed to soften. The mixture should look like thick frosting and spread easily over the chicken.
  • Spread the cream cheese mixture evenly over the chicken, then scatter the jalapeno peppers, bacon, and cheddar cheese across the top. Try to cover the surface evenly so every bite gets creamy, cheesy, smoky flavor.
  • Cover the dish with foil and bake for 35-40 minutes, removing the foil for the last 5 minutes to melt the cheese; thighs may need about 10 minutes longer. The top should be bubbly and lightly golden at the edges, and the chicken should reach 165°F for chicken in the thickest part.

Notes

Smooth topping tip: Ensure your cream cheese is fully softened to room temperature before mixing. This prevents a lumpy texture and helps it spread smoothly over the chicken.
Preventing a watery dish: Pat the chicken dry with paper towels before seasoning and arrange it in a single layer in the baking dish. This helps the chicken bake instead of steam.
Control the heat: For a milder flavor, remove all seeds and white membranes from the jalapeños. For more heat, leave some in.
Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days.
