- 1 cup ice
- ½ cup club soda
- ¼ cup Torani flavored syrup (raspberry)
- 2 tablespoons heavy cream
- whipped cream for topping - optional
Add the ice to a drinking glass until the glass is about half full. The ice should create enough height for the syrup and cream to move through the drink instead of blending right away.
Pour in the ½ cup club soda. You want the bubbles active and cold before adding anything richer.
Add the ¼ cup flavored syrup to the glass. The color will sink and ribbon through the soda, which is exactly what you want at this stage.
Slowly pour in the 2 tablespoons heavy cream, then stir only when ready to drink. The cream should drift through the soda in pale streaks before you mix it all together.
Tips: Chill the club soda and cream well before starting so the drink stays fizzy and the cream layers more cleanly.
Serving: For a full soda fountain feel, finish with the optional whipped cream just before serving.
Troubleshooting: Pour the cream in last and pour it slowly over the ice. If you want an extra neat layered effect, let it run over the back of a spoon.
Flavor tip: Raspberry, vanilla, strawberry, and peach are usually easy to work with. Citrus flavors like lemon or lime can be more likely to split the dairy, so use them with more care.
Party tip: If serving this at a party, keep the dairy well chilled and return it to the refrigerator when it is not being used.
