Equipment

  • 6-quart Crock Pot

Ingredients

  • 3 lb chuck roast trimmed of large pieces of fat then cut into large pieces
  • 1 envelope Italian salad dressing mix
  • 8 oz pepperoncini pepper slices + splash of juice plus extra peppers for serving
  • 8 oz Chicago-Style Giardiniera drained, plus extra for serving
  • 14.5 oz can beef broth
  • provolone cheese slices
  • buns

Instructions

  • Arrange the chuck roast pieces in a 6-quart Crock Pot, scatter the Italian salad dressing mix over them, then add the pepperoncini slices, a splash of their juice, drained giardiniera, and beef broth. Lift the beef pieces briefly so the broth runs underneath, then cover and cook on low for 9 hours, until a fork slides in easily and twists the meat apart.
  • Pull the roast into shreds with two forks, returning every piece of beef to the cooking liquid as you work. Cook on low for 1 more hour so the shredded beef absorbs the hot jus and the broth becomes darker and more concentrated.
  • Split the buns and fill them with the juicy shredded beef, then add provolone cheese slices and extra pepperoncini peppers and giardiniera, if desired. If using gluten free buns, toast or broil them first so they hold their shape beneath the warm filling.

Notes

Bread selection: Use crusty French rolls or sturdy hoagie rolls rather than soft sandwich bread so the roll holds its shape when loaded with warm meat and savory jus.
Storage: Store leftover beef completely submerged in its seasoned jus in an airtight container in the refrigerator to keep the shreds tender and juicy. Keep rolls, cheese, and toppings stored separately.
Reheating: Warm the shredded beef and jus gently in a saucepan over medium-low heat, stirring occasionally until heated through. Avoid a rapid boil to prevent reducing the liquid too quickly.
