Equipment

  • Espresso machine
  • bottle shaker or frother
  • jar with a lid
  • serving glass
  • Small spoon

Ingredients

Latte

  • 60 mL espresso, a double shot
  • 5 grams unsweetened cocoa powder
  • 180 mL milk
  • 1 tsp raw sugar add more if you want a sweeter coffee
  • ice

Mascarpone Cream

  • 28 grams mascarpone cheese, room temperature
  • 30 mL heavy whipping cream, cold
  • 2 tsp powdered sugar
  • cocoa powder for dusting

Instructions

Iced Latte Assembly

  • Brew 60 mL espresso, then stir in the unsweetened cocoa powder and raw sugar while the coffee is still hot. The heat helps both dissolve smoothly, so the latte tastes evenly chocolatey instead of powdery.
  • Fill your glass with ice and pour in the milk. Leave a little room at the top so the mascarpone cream can sit over the milk instead of spilling over the rim.

Mascarpone Cream

  • Add the mascarpone cheese, cold heavy whipping cream, and powdered sugar to a jar with a lid, then shake hard until the mixture thickens. Stop when it looks creamy and holds a soft mound rather than running like plain cream.
  • Spoon or pour the mascarpone cream over the milk, then finish with a light dusting of cocoa powder. The top should look pillowy and slightly thick, with the cocoa settling across the surface instead of sinking straight in.

Notes

Perfect Cream: For a fluffy cream that floats, use room temperature mascarpone and cold heavy cream. Shake or whip until it holds a soft shape, almost like a melted marshmallow.
Make-Ahead: The mascarpone cream can be prepared in advance and stored in an airtight container in the fridge for up to 3 days. Just give it a quick shake or whisk before using to restore its texture.
Espresso Options: No espresso machine? No problem. A strong brew from a Moka pot, French press, or AeroPress works great. You can also dissolve 2 tsp of espresso powder in 2 tbsp of hot water for a quick substitute.
