Equipment

  • 10 oz mason jar or small bowl with lid

Ingredients

  • 1/2 cup oats (quick, minute or rolled)
  • 1 tbsp chia seeds
  • 1 tbsp vanilla protein powder
  • 1/4 tsp cinnamon
  • 3 tbsp plain 2% Greek yogurt
  • 1/2 cup milk
  • 1 tsp honey or maple syrup
  • 1/2 tsp vanilla extract

Instructions

  • Combine the oats, chia seeds, vanilla protein powder, and cinnamon in a 10 oz mason jar or small lidded bowl, stirring until evenly blended. The dry mixture should look uniform, with no visible streaks of protein powder.
  • Add the Greek yogurt, milk, honey or maple syrup, and vanilla extract, then stir vigorously from the bottom and around the sides. The mixture should become smooth and loose enough to stir easily, without dry powder clinging to the base.
  • Let the jar stand for 5 minutes, then stir it once more before covering it. This second stir breaks up any thickened spots before they turn into dry clumps.
  • Cover and refrigerate for at least 3 hours, preferably overnight. The oats are ready when the mixture is thick, creamy, and pudding-like rather than thin and sloshy.

Notes

Troubleshooting clumps: Break up protein powder clumps with the back of a spoon and stir firmly. Always use the second-stir method after a 5-minute rest to prevent dry powder pockets.
Fixing a runny texture: If the mixture is too thin after chilling, stir in 1 tablespoon of chia seeds and let the jar sit for 30 minutes to absorb the extra moisture.
Topping tip: Keep granola, nuts, and coconut separate until the oats are fully chilled and you are ready to eat, otherwise they will quickly become soggy.
