Ingredients
 

  • 1 small box sugar free Black Cherry Jello
  • 1 cup water
  • 10 oz full-fat Greek yogurt
  • 1 scoop unflavored whey protein powder

Instructions
 

Dissolve the Jello Base

  • Gently warm 1 cup of water in a small saucepan or microwave until hot but not boiling (around 140°F / 60°C).
  • Pour the warm water into a medium mixing bowl. Whisk in the sugar-free Black Cherry Jello until it is completely dissolved and the liquid is clear with no granules at the bottom.

Cool, Blend, and Aerate

  • Let the jello mixture cool to room temperature. Rushing this step can cause the yogurt to separate.
  • Once cooled, add the full-fat Greek yogurt and unflavored whey protein powder to the jello base. Using a hand blender, blend for 1-2 minutes until the mixture is smooth, pale, and frothy.

Portion and Chill

  • Divide the mousse evenly among 4 individual ramekins or small dessert cups.
  • Refrigerate for at least 30 minutes, or until set. For the best texture, chill for 2-4 hours. The mousse is ready when it jiggles as a single piece.

Notes

Perfect Texture Tip: For the most reliable, firm set, you can bloom 1 teaspoon of unflavored gelatin in 2 tablespoons of cold water for 5 minutes, then stir it into the warm jello mixture until dissolved.
Temperature is Key: Ensure the jello base has cooled to room temperature before adding the yogurt and protein powder. A warm base can cause a grainy or separated texture.
Get it Fluffy: Use a hand blender for 1-2 full minutes to whip air into the mousse. This is the secret to a light, cloud-like texture rather than a dense one.
Storage: Cover and store the mousse in the refrigerator for up to 4 days. The texture is best within the first 2 days. Do not freeze.
Variations: Feel free to experiment with other sugar-free Jello flavors like strawberry, lime, or orange. For a dairy-free version, a thick, full-fat coconut yogurt is the best substitute.
