Ingredients
 

  • 2 large boneless, skinless chicken breasts, cubed
  • 15 oz black beans, drained and rinsed
  • 1 white onion, diced
  • 2 cloves garlic
  • 16 oz medium chunky salsa
  • 1 cup brown rice, cooked
  • 1 tablespoon olive oil
  • 1 bundle green onion, sliced
  • salt, to taste
  • black pepper, to taste

Instructions
 

Prep the pan and soften the onion

  • Set a large skillet over medium-high heat and add the olive oil. Allow the oil to warm for a moment.
  • Add the diced onion with a pinch of salt and cook for about 3 minutes, stirring occasionally, until softened and translucent.

Cook the chicken and bloom the garlic

  • Push the onions to the side of the skillet and add the cubed chicken to the center. Season with salt and black pepper. Cook until the chicken is nearly cooked through, stirring occasionally.
  • Stir in the garlic and cook for about 30 seconds more, until fragrant.

Build the skillet mixture

  • Pour in the salsa, black beans, and cooked brown rice. Stir until everything is well combined and evenly coated.
  • Let the mixture simmer for 5 minutes, or until the chicken is fully cooked through and the flavors have melded.

Assemble and finish

  • Spoon the chicken and rice mixture into 4 bowls. Finish with a topping of sliced green onion and serve immediately.

Pro Tip: For the best flavor, ensure your skillet is properly hot before adding the chicken. This creates a delicious sear instead of steaming the meat.
Variations: Chicken thighs can be used for a juicier result. For a low-carb version, replace the brown rice with cauliflower rice and the black beans with sauteed fajita vegetables.
