Equipment

  • Grill pan

Ingredients

  • 2 medium zucchini (sliced lengthwise into ¼-inch-thick planks)
  • Extra-virgin olive oil (for drizzling)
  • ¼ teaspoon garlic powder
  • Lemon wedges (for squeezing)
  • Chopped fresh parsley or basil leaves
  • Sea salt and freshly ground black pepper

Instructions

  • Heat a grill or grill pan over medium heat. The surface should be fully hot before cooking so the zucchini starts to sear instead of steam.
  • Arrange the zucchini planks on a large plate or tray, drizzle with extra-virgin olive oil, and season with the garlic powder plus pinches of sea salt and black pepper, then turn to coat. Each piece should look lightly glossy and evenly seasoned without pools of oil collecting underneath.
  • Set the zucchini on the grill and cook for 1 to 3 minutes per side. You should hear a sharp sizzle when the planks hit the grates, and they’re ready to turn once dark grill marks appear and the flesh looks tender but still slightly firm.
  • Transfer the zucchini off the heat, squeeze over lemon wedges, add chopped fresh parsley or basil leaves, and adjust the seasoning to taste before serving. The zucchini will soften a little from residual heat, so pull it while it still has a bit of bite.

Notes

Choosing your zucchini: Small to medium zucchini (6-8 inches long) work best. They have firmer flesh, fewer seeds, and a sweeter flavor that holds up well on the grill.
Preventing sogginess: The key is high heat and speed. Cut planks at least ¼ inch thick and cook for just 1-3 minutes per side. Don't overcrowd the grill, as this traps steam and makes the zucchini mushy.
Storage and reheating: Leftovers can be kept in an airtight container in the refrigerator. For best results, reheat in a hot skillet or air fryer to help restore some of the original texture. Microwaving will make it softer.
