Fudgy Brownies:
- 1 1/3 cup (7 oz or 200 g) good quality chocolate chips, semisweet or bittersweet
- 1/2 cup (113 g or 1 stick) unsalted butter, room temperature and cut into quarters
- 3 tablespoons (18 g) unsweetened cocoa powder
- 3 large eggs, room temperature
- 1 1/4 cups (250 g) granulated sugar
- 2 teaspoons pure vanilla extract
- 1 cup (125 g) all purpose flour
- 1/2 teaspoon salt
Chocolate Ganache Topping:
- 2 cups (150 g) fresh strawberries, halved
- 2 cups (300 g) good quality chocolate chips, semisweet or bittersweet
- 6 tablespoons (90 ml or 3 oz) heavy cream, room temperature
Prepare the Pan and Melt the Chocolate Base
Heat your oven to 350 F. Line an 8-inch square baking pan with parchment paper, leaving enough overhang to help lift the brownies out later, then set the pan aside.
Set up a double boiler or place a medium heatproof bowl over a pan of barely simmering water. Add the chocolate chips and unsalted butter, stirring occasionally until smooth and glossy. Whisk in the unsweetened cocoa powder and let it cool slightly so it remains warm but not hot.
Mix and Bake the Brownies
In a medium bowl, whisk the eggs, sugar, vanilla, and salt for about 30 seconds until well blended. Pour in the warm chocolate mixture and whisk until the batter is dark and shiny.
Switch to a wooden spoon and stir in the flour only until no dry streaks remain. Spread the batter into the prepared pan, smoothing the top with an offset spatula.
Bake for 30 to 35 minutes until the brownies are puffed and a toothpick comes out with a few sticky crumbs. Let the brownies cool completely in the pan on a wire rack for about 2 hours.
Assemble the Strawberry and Ganache Layers
Spread a thin, even layer of strawberry preserves over the cooled brownies. Arrange the halved strawberries cut side down across the surface so they sit snugly over the jam base.
In a saucepan over low heat, warm the heavy cream for about 2 minutes until hot but not boiling. Remove from heat, stir in the chocolate chips until smooth, and return to heat for 30 seconds only if needed to melt remaining pieces.
The Jam Glue Secret: A thin layer of strawberry preserves acts as a sticky anchor that prevents the fresh fruit from sliding when you pour the ganache or slice the bars.
For Clean Slices: Chill the brownies until the ganache is fully set. Use a sharp knife warmed under hot water and wiped dry before every single cut to prevent dragging the layers.
Moisture Management: Ensure the fresh strawberries are washed and dried thoroughly with towels. Any leftover water can cause the ganache to turn grainy or keep it from adhering to the fruit.
Storage: Because this recipe uses fresh fruit, store the brownies in an airtight container in the refrigerator. They are best enjoyed within 2 to 3 days before the berries begin to release excess moisture.
