- 150 g granola (1 cup)
- 2 tbsp. honey or maple syrup
- 2 tbsp. peanut butter
- 360 g plain Greek yogurt (1 1/2 cups)
- 140 g blueberries fresh or frozen (3/4 cup) + extra
- 2 tbsp. granulated sugar
Prepare the Granola Base
Combine the honey and peanut butter in a small microwave-safe bowl and heat for 20 seconds. Stir until the mixture is smooth and glossy.
Place the granola in a large bowl and pour the peanut butter mixture over it. Stir until the oats are well coated and sticky.
Divide the mixture among 12 muffin tins or silicone molds, pressing down firmly to create a solid base. Freeze for 20 to 30 minutes until set.
Cook the Blueberry Swirl
In a small saucepan over medium heat, combine the blueberries and sugar. Simmer for 3 to 4 minutes, mashing the berries until they release their juices and the sauce thickens. Let the sauce cool completely.
Assemble the Cups
Spoon 1 to 2 tablespoons of Greek yogurt onto each frozen granola base. Top each cup with 1 to 2 teaspoons of the cooled blueberry sauce.
Using a toothpick or skewer, lightly swirl the blueberry sauce into the yogurt to create a marbled pattern.
Freeze Until Set
Garnish with extra berries or granola if desired. Freeze the cups for 1 to 2 hours until they are fully solid.
Remove from the freezer and let stand at room temperature for 5 to 10 minutes before serving to ensure a creamy texture.
Pro Tip: Use silicone liners for easy removal. They peel away cleanly from the frozen yogurt, whereas paper liners may stick.
Texture Secret: Allowing the cups to thaw for 5 to 10 minutes before eating transforms them from icy to a creamy, custard-like consistency.
Storage: Store in an airtight container in the freezer for up to 60 days. Place parchment paper between layers to prevent the cups from sticking together.
