- 2 cups blueberries
- 1 cup Greek yogurt
- 2-3 teaspoons maple syrup or honey
- 2-3 teaspoons lemon zest
- Melted peanut butter or chocolate
Line a baking sheet with parchment paper.
In a bowl, combine blueberries and yogurt and mix well. Using a spoon, place small dollops of yogurt mixture onto a lined baking sheet. freeze until set, at least 1 hour.
Enjoy as is or dip and coat the clusters in melted chocolate or peanut butter.
If using chocolate, it will harden immediately. For peanut butter, place back in the freezer until hardened.
Texture tip: Pat the blueberries completely dry before they go near the yogurt, or the coating will slide right off.
Yogurt tip: Use Greek yogurt instead of regular yogurt because its thick texture holds shape better and prevents the bites from turning icy.
Storage: Store the frozen clusters in an airtight container or freezer-safe bag for up to 1 month. Freeze them in a single layer first so they do not stick together.
