Equipment

  • Pan
  • Slow cooker
  • Mixing Bowl

Ingredients

  • 1 Tbsp butter
  • 1 medium yellow onion halved and thinly sliced
  • ¼ tsp baking soda
  • 24 oz lean ground beef (93/7 worked great)
  • 1 (1 oz) packet onion soup mix
  • 2 eggs
  • ½ cup milk
  • ½ cup plain bread crumbs
  • 1 tsp Worcestershire sauce
  • 1 (10.5 oz) french onion soup condensed
  • 6 slices of swiss cheese or provolone

Instructions

  • In a pan over medium-high heat, melt the butter, then cook the onion with the baking soda, stirring occasionally, before transferring it to the slow cooker. Look for softened, golden-amber slices and a sweet, savory aroma.
  • Place the beef, dry onion soup mix, eggs, milk, bread crumbs, and Worcestershire sauce in a mixing bowl, then cut 4 cheese slices into chunks and add them. Small cheese pieces distribute more evenly than large folded pieces.
  • With clean hands, gently bring the ingredients together, form a loaf, and settle it over the onion layer. Stop mixing once everything holds together without visible streaks of egg or dry crumbs.
  • Empty the condensed French onion soup over the shaped loaf. The soup should coat the beef and run down around the onion bed.
  • Put the lid on and cook on low for 4 hours or high for 3 hours, checking that the center reaches 165°F with an instant-read thermometer. Use the center reading rather than the surface color to judge doneness.
  • Drape the final 2 cheese slices across the cooked loaf and replace the lid to melt them. The topping is ready when it softens and conforms to the surface of the beef.
  • Cut the finished loaf into portions and spoon the onion cooking juices over each serving. The slices should show scattered melted cheese pockets beneath the soft cheese topping.

Notes

Ingredient tip: Measure the quarter teaspoon of baking soda level when browning the onions. Adding extra can turn the slices mushy and leave a harsh, metallic taste.
Texture tip: Fold the beef mixture gently by hand just until combined, and use 93/7 ground beef so excess rendered fat does not pool in the slow cooker juices.
Serving tip: Let the cooked loaf rest for 10 minutes with the lid off before slicing so the melted cheese pockets firm up and the slices hold together.
Oven option: Layer the browned onions, shaped loaf, and undiluted condensed soup in a greased baking dish. Bake uncovered at 350°F for 50 to 60 minutes until the center reaches 165°F, then top with the remaining cheese for 2 to 3 minutes to melt.
Storage: Refrigerate leftovers in shallow airtight containers within 2 hours and keep for 3 to 4 days, or freeze cooked slices with some onion juices for up to 3 months. Thaw in the refrigerator and reheat covered with a spoonful of broth until the center reaches 165°F.
