Instructions
Start the Rice and Stir Up the Sauce
Cook your white rice according to the package directions using whatever method you trust, stovetop or rice cooker. You want it hot and fluffy, ready to catch all that caramelized sauce.
In a small jar or measuring cup, whisk together the sauce ingredients until the brown sugar fully dissolves and the mixture looks glossy. This is also where I whisk in the finely grated Asian pear, or sweet apple, so it melts into the sauce and perfumes it gently.
Prep the Aromatics
Dice the yellow onion so it cooks evenly and turns sweet in the pan. Slice the green onions and keep the whites separate from the greens, the whites cook with the garlic, the greens stay fresh for the top.
Hard Sear the Beef, Then Caramelize the Sauce
Heat a large skillet over medium to medium-high heat. Add a small amount of cooking oil if your pan needs it, then sauté the diced onion for 3-4 minutes until it turns translucent and smells gently sweet.
Add the minced garlic and the white parts of the green onion, then cook for 30 seconds, just until fragrant. Keep things moving so the garlic does not scorch.
Add the ground beef and press it flat into the pan. Let it sit completely undisturbed for 3 full minutes so you get a deep brown crust, you should hear a steady sizzle and see the edges turning darker and crisp.
After the 3 minutes, break the beef up and continue cooking until no pink remains, about 5-6 minutes more. The goal is fully cooked beef with browned bits throughout, not pale crumbles.
Pour in the prepared sauce and lower the heat slightly so it settles into a low simmer. Stir until every piece of beef is coated, then let it bubble and thicken for 2-3 minutes until it looks sticky and lacquered, and the aroma turns sweet, nutty, and intensely savory.
Assemble Your Bowls
Spoon the caramelized bulgogi beef over warm rice, then finish with the green onion tops for a fresh bite and a little snap of color.
