Pull a 1 ounce shot of espresso with your preferred machine, then let it sit for 3 to 5 minutes until it is closer to room temperature. This small pause prevents the hot espresso from melting the ice too fast and stealing your crema.
Build the shaker
In a cocktail shaker, pour in the 2 ounces of Licor 43 and 2 ounces of reposado tequila or mezcal, then add the cooled espresso.
Add 2 drops of 20% saline solution and 2 dashes of molé bitters to round out the bitterness and bloom the chocolate-spice notes.
