Cake:
- 1 box white cake mix
- 1 3-ounce package strawberry flavored Jell-O
- 3 tablespoons flour
- 1 cup butter
- 0.5 cup cold water
- 16 ounces package frozen strawberries (thawed)
- 4 eggs
Icing:
- 8 ounces butter (softened)
- 1 pound powdered sugar
- 8 to 10 ounces strawberries diced or blended into a purée
Pan Prep and Batter Setup
Line two 9-inch cake pans, or three 8-inch pans, with wax paper, then preheat the oven to 350 degrees F to ensure a clean release for your layers.
In a large bowl, whisk together the dry cake mix and flour so the flour disperses evenly to avoid dense pockets.
The Strawberry Reduction Twist
Puree the 16 ounces of thawed strawberries, then simmer the puree in a saucepan until it reduces by half to concentrate the flavor and remove excess moisture.
Measure out 1/2 cup of the strawberry reduction and stir it into the strawberry flavored Jell-O until glossy and fully blended.
Mix, Bake, and Cool
Add the dry cake mix and flour mixture into the strawberry base, then beat until the batter looks smooth and evenly pink.
Add the eggs one at a time, mixing until each disappears before the next goes in to ensure a satiny emulsion.
Add the butter and any remaining thawed strawberry bits, then beat until the batter falls from the beater in thick ribbons.
Divide the batter evenly between the prepared pans and bake for 15 to 20 minutes. Test the center with a toothpick; it should come out clean.
Cool the cake layers completely on a wire cooling rack so the crumb sets and the frosting won’t melt upon application.
Strawberry Butter Icing and Assembly
Beat the softened butter, then add the powdered sugar and strawberries, mixing until the icing turns creamy and spreadable.
Level the cooled layers using a serrated knife, then frost and stack. Chill the assembled cake briefly to help the layers settle.
Moisture Control: Reducing the strawberry puree concentrates flavor and sugars while removing excess water, which prevents the box mix from sinking in the middle.
Emulsification Tip: Bringing butter and eggs to room temperature allows them to blend smoothly into the batter, preventing a curdled appearance and ensuring an even bake.
Storage: Keep the cake in the refrigerator for up to 4 days. The strawberry flavor deepens after 24 hours in the fridge, making it a perfect make-ahead dessert.
