Equipment

  • Air Fryer or Oven
  • Knife
  • Pastry brush

Ingredients

  • 1 frozen green onion pancake or as many as desired
  • 1 egg lightly beaten with 1 tbsp water
  • 1/2 tsp toasted sesame seeds

Instructions

Prep the Pancake

  • Set the frozen green onion pancake on a large cutting board and let it thaw just enough to lose its rock-hard stiffness. It should be slightly softened but still cold and firm to ensure clean cuts.
  • Slice the pancake into long triangles, similar to slim pizza wedges. Aim for pieces with a wide base and a narrow tip to create the proper croissant shape.

Add the Chili Cheese Center

  • Place a small dab of chili crisp on the wide end of each triangle. Add a small pinch of sharp cheddar cheese over the chili crisp for a rich, savory center.

Roll and Finish

  • Starting from the wide base, roll each triangle snugly toward the pointed end. Tuck the thin tip underneath the roll so the bite sits on its tail to prevent it from unrolling.
  • Brush the tops lightly with the egg wash and sprinkle with toasted sesame seeds for a glossy finish and nutty aroma.

Cook Until Golden

  • For the air fryer, cook at 400°F for about 10 minutes until the bites are puffed and deeply golden. If using an oven, bake at 400°F on a parchment-lined sheet for 15 to 20 minutes.

Notes

Pancake Selection: Use Taiwanese green onion pancakes specifically. They use a laminated dough that creates the necessary flaky, croissant-like layers, unlike batter-based Korean pancakes.
Temperature Control: Work quickly while the dough is still cold. If the pancake reaches room temperature, the fat layers will melt too early, resulting in a dense rather than airy texture.
Freezing Instructions: You can roll these ahead of time and freeze them raw on a baking sheet. Once firm, transfer to a bag and bake directly from frozen, adding 2 to 3 extra minutes to the cook time.
Reheating Tip: Always use an air fryer or oven to reheat leftovers to restore the crispness. Avoid the microwave, as it will make the dough soft and chewy.
