Equipment

  • 9x13-inch Pan
  • Electric hand mixer
  • Measuring cup

Ingredients

Crust:

  • 1 18 ounce package Oreo Cookies
  • 1/4 cup unsalted butter

Filling:

  • 4 8 ounce packages Philadelphia Cream Cheese
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 1 8 ounce tub Cool Whip Whipped Topping

Instructions

Prep the Base

  • Reserve 15 Oreo cookies for the filling. Crush the remaining cookies until they resemble fine, dark sand without large chunks.
  • Melt the unsalted butter and stir in 1/2 teaspoon of espresso powder until dissolved to enhance the chocolate flavor.
  • Pour the butter mixture over the crumbs and mix until evenly moistened and the mixture holds together when squeezed.

Press and Chill the Crust

  • Transfer the crumbs into a 9x13-inch pan and press firmly into an even layer using the bottom of a measuring cup.
  • Place the pan in the refrigerator to set while you prepare the cheesecake filling.

Mix the Filling, Then Fold

  • Coarsely chop the 15 reserved Oreo cookies into bite-sized chunks so the filling remains marbled rather than gray.
  • In a large bowl, beat the brick-style cream cheese with sugar and vanilla using an electric mixer until smooth. Add a pinch of flaky sea salt to brighten the flavor.
  • Gently stir in the whipped topping until fluffy, then fold in the chopped Oreo pieces using light motions to maintain aeration.

Fill, Chill, and Slice

  • Spread the filling evenly over the cold crust. Cover the pan and refrigerate for at least 4 hours, or overnight for best results.
  • Once firm, slice into 20 squares and serve cold.

Notes

Room Temperature Tip: Always use brick-style cream cheese at room temperature to ensure a silky, lump-free filling that sets properly.
Crust Secret: Adding a small amount of espresso powder to the melted butter doesn't make the crust taste like coffee. Instead, it acts as a flavor booster for the cocoa.
Slicing Success: For clean, professional-looking squares, dip your knife in warm water and wipe it dry between every single cut.
Folding Technique: Be very gentle when folding the whipped topping into the cream cheese mixture. Over-mixing can deflate the air and result in a runny filling.
