Ingredients
 

  • 1 cup (6 oz) Semi-sweet chocolate chips
  • 1/2 cup (4 oz) heavy cream
  • 1.5 Tbsp Light corn syrup
  • 1.5 teas instant coffee

Prepare the Chocolate Base

  • Place the Semi-sweet chocolate chips in a heatproof bowl and set it on the counter where you can work comfortably.
  • Pour the heavy cream into a microwave-safe measuring cup or a small saucepan. Heat it for 2 to 3 minutes in the microwave, or warm it on the stove, until it is just boiling and steaming heavily, but not cooked so hard that the dairy scorches.

Bloom the Coffee and Melt

  • As soon as the cream reaches a boil, stir in the instant coffee along with a pinch of sea salt. This quick bloom in the hot fat helps the coffee dissolve fully and releases a rich roasted aroma.
  • Pour the hot coffee-infused cream over the chocolate chips. Leave the bowl completely undisturbed for about 5 minutes so the heat can soften the chocolate evenly from edge to center.

Whisk into a Smooth Emulsion

  • Using a whisk, begin stirring slowly from the center outward until the chocolate and cream come together into a dark, glossy mixture. It may look streaky at first, then suddenly turn silky.
  • If you notice stubborn bits of unmelted chocolate, warm the bowl in the microwave for a few seconds, no more than 10 seconds at a time, to finish the melt without overheating the cocoa butter.

Finish for Shine and Flavor

  • Stir in the Light corn syrup and an optional splash of your chosen extract. For the final polish, whisk in a tablespoon of cold, unsalted butter to create a sleek and reflective finish.

Pro Tip: For the smoothest future batches, use a high-quality chocolate bar chopped into small, even pieces instead of chips. The melt is usually silkier and the flavor more complex.
Storage Tip: At cool room temperature, ganache can safely sit for 1 to 2 days. For longer storage, keep it in an airtight container in the refrigerator for up to 2 weeks.
Troubleshooting: If your ganache looks split or oily, whisk in 1 tablespoon of warm milk very vigorously until the mixture turns smooth and glossy again.
