- 8 to 10 cups romaine or iceberg lettuce, chopped
- 1 lb lean ground beef or turkey
- 1 package taco seasoning (or 2.5 tablespoons bulk seasoning)
- 1 can pinto or black beans, drained
- 1 cup corn
- 2 tomatoes, chopped
- 1 1/2 cups shredded cheese
- 2 cups Fritos corn chips
- Catalina Dressing (to taste)
- Chopped green onions (optional)
- Black olives (optional)
Cook the meat
Set a skillet over medium heat and cook the ground beef or turkey until browned, using your spoon to break it up gently into bite-sized chunks instead of tiny crumbles. When the meat is nearly done and smells deeply savory, stir in the taco seasoning so it coats everything evenly and blooms in the heat.
Take the skillet off the heat and drain away any excess fat. Let the seasoned meat rest for 5 to 10 minutes, just until it is still warm but no longer steaming, because hot meat will wilt the lettuce and steal that fresh crunch.
Build the smoky flavor
Heat a separate dry skillet until hot, then add the corn and let it sit long enough to pick up a few dark blisters. You are not cooking it for long, just giving it those lightly blackened edges and a toasty aroma that makes the salad taste a little smoky and special.
In a small bowl, whisk the Catalina dressing with a squeeze of fresh lime juice and a dash of hot sauce. The dressing should still taste sweet and familiar, but now with a brighter tang that cuts through the richness of the meat and cheese.
Assemble the salad
In a large bowl, combine the chopped lettuce, drained beans, charred corn, chopped tomatoes, shredded cheese, and the warm seasoned meat. The bowl should already look colorful and generous, with plenty of texture in every scoop.
Drizzle the lime-spiked Catalina dressing over the top, starting lightly, then toss until the greens are coated but not weighed down. You want the lettuce to glisten, not swim.
Finish and serve
Right before serving, fold in the Fritos corn chips so they stay loud and crunchy. Pile a few extra on top with chopped green onions and black olives, then bring it straight to the table while the contrast between cool lettuce, warm taco meat, and crisp chips is at its best.
Dressing Tip: Start with just enough Catalina dressing to lightly gloss the greens, then toss and taste before adding more.
Meat Prep: Keep the meat in larger, chunky bites instead of breaking it into fine crumbles so it holds onto the taco seasoning better and stays substantial.
Ingredient Prep: Rinse and drain the beans thoroughly to remove cloudy liquid and improve the overall texture of the salad.
Make-Ahead: For meal prep, store the meat, lettuce, beans, tomatoes, cheese, dressing, and Fritos separately, then toss everything together right before serving.
