Equipment

  • Espresso Machine or Moka Pot
  • Milk frother
  • Heat-proof mugs
  • Large measuring cup

Ingredients

  • 2 - 4 shots espresso (depends on how strong you like it)
  • 12 oz milk of choice
  • 3 teaspoons cookie butter
  • Tiny pinch sea salt
  • Whipped cream, for garnish
  • Ground cinnamon, for dusting
  • Warmed cookie butter, for drizzling
  • Biscoff cookies, for serving

Instructions

Brew the Coffee Base

  • Brew 2 to 4 shots of fresh espresso and pour them into a heat-proof cup while piping hot.
  • Immediately stir in 3 teaspoons of cookie butter and a tiny pinch of sea salt. Continue stirring until the spread melts completely into the espresso, creating a smooth, glossy syrup.

Heat and Froth the Milk

  • Pour 12 oz of your preferred milk into a measuring cup and microwave for 1 minute until steaming and hot.
  • Use a handheld milk frother to aerate the hot milk until it develops a creamy, light texture with fine bubbles.

Assemble the Lattes

  • Divide the espresso and cookie butter mixture between two mugs. Pour in the frothed milk, using a spoon to hold back the foam so the liquid fills the mug first, then spoon the foam on top.
  • Top each mug with a swirl of whipped cream, a dusting of ground cinnamon, a drizzle of warmed cookie butter, and a Biscoff cookie on the side. Serve immediately.

Notes

Pro Tip: Ensure your espresso is freshly brewed and very hot when adding the cookie butter, as this heat is essential for emulsifying the fats into a smooth syrup base.
Storage Tip: You can prepare the espresso and cookie butter base in advance and store it in an airtight jar in the fridge for up to 3 days. Simply reheat before adding fresh frothed milk.
Variation Tip: To make an iced version, melt the cookie butter into the hot espresso first, then pour that mixture over a glass filled with ice and top with cold milk.
