Ingredients
 

Chocolate Layer

  • 1 cup Chocolate wafers

White Chocolate Layer

  • 1 cup White chocolate
  • 1/2 cup Crushed candy canes

Instructions
 

Temper the Dark Chocolate Base

  • Optional: Stir 1/4 teaspoon espresso powder into the chocolate wafers before starting to enhance the cocoa flavor.
  • Melt 75% of the chocolate wafers in the microwave in 30-second increments, stirring well between each burst until mostly melted.
  • Add the remaining 25% of the wafers as a seed and stir patiently until the mixture is glossy and completely smooth.

Fill the Molds and Build the Layers

  • Pour the tempered dark chocolate into your molds or mini muffin liners, then tap the mold gently on the counter to level the surface and release air bubbles.
  • Melt the white chocolate in the microwave using the same 30-second method, stirring until satiny and smooth.
  • Mix half of the crushed candy canes into the melted white chocolate, then pour it over the dark chocolate layer.
  • Sprinkle the remaining crushed candy canes over the top for a festive, sparkling finish.

Set, Unmold, and Do the Snap Test

  • Allow the candies to set at room temperature or in the refrigerator until they are completely firm.
  • Once firm, remove the candies from the molds. They should have a dry, glossy top and break with a clean snap.

Notes

Safety Tip: Keep all tools bone-dry. A single drop of water can cause the chocolate to seize into a clumpy, unpourable mess.
Storage Tip: Store your finished candies in an airtight container with parchment paper between layers. Keep them in a cool, dry place to prevent fat bloom and maintain their shine.
Variation Tip: For a non-holiday version, replace the crushed candy canes with toasted nuts, pretzel bits, or puffed quinoa to add a different crunch.
