Churro Bites:
- 1 store bought 7" angel food cake
- 1 cup sugar
- 1/4 cup cinnamon
- Vegetable oil for cooking
Cream Cheese Frosting or Dip:
- 4 oz. cream cheese, softened
- 1/2 cup Powdered sugar
- 1 teaspoon vanilla extract
- 3 – 4 tablespoons milk
Prep the Coating and Cake
In a large bowl, whisk the sugar and cinnamon together until the mixture is uniform in color and free of streaks.
Using a sharp serrated knife and a gentle sawing motion, cut the angel food cake into 1 1/2-inch cubes. Avoid pressing down to ensure the airy structure remains intact.
Pan-Fry the Bites
Heat approximately 1/4 inch of vegetable oil in a large nonstick skillet over medium heat until it reaches 350°F.
Add the cake cubes in batches, frying for 1 to 2 minutes per side until golden brown. Keep a close watch as the high sugar content causes them to brown very quickly.
Remove the browned bites with a slotted spoon and immediately drop them into the cinnamon sugar. Toss gently with a spatula to ensure a thick, even coating.
Make the Dip and Serve
Beat the softened cream cheese until smooth and creamy. Mix in the powdered sugar, vanilla extract, and 3 tablespoons of milk until the consistency is silky.
Add additional milk if a thinner consistency is desired. Serve the warm churro bites immediately with the cream cheese dip on the side.
Slicing Tip: Always use a serrated knife for angel food cake. A standard blade will crush the delicate air pockets, resulting in dense bites rather than fluffy ones.
Temperature Control: Ensure the oil is hot (350°F) before adding the cake. Cool oil will be absorbed by the sponge, making the bites greasy, while oil that is too hot will burn the sugar exterior before the center warms.
Coating Secret: Toss the bites in cinnamon sugar the moment they leave the oil. The residual heat and a light film of oil are necessary for the sugar to stick properly.
