Instructions
Rinse the strawberries, then dry each one well with a clean towel. The skins should feel dry rather than slick.
Cut the berries lengthwise and shave a thin piece from the rounded underside of each half; arrange them on a baking sheet. Each half should rest flat without rocking.
Beat the softened cream cheese with the powdered sugar and vanilla in a medium bowl. Stop when the mixture looks smooth and creamy, with no visible lumps.
Add the heavy whipping cream and beat for about 2 minutes, until the filling thickens slightly. It should hold soft, visible ridges when the beaters lift.
Spoon the filling into a piping bag or zip-top bag and pipe it onto the strawberry halves. The filling should form a mound that stays in place.
Scatter the graham cracker crumbs over the filled berries just before serving. The crumbs should sit on top of the cream rather than sink into it.
Notes
Moisture tip: Ensure strawberry halves are patted thoroughly dry with clean paper towels before piping so the cheesecake mixture adheres firmly without slipping off.Leveling: Shave only a paper-thin sliver from the rounded underside of each half so the berries sit stable on the serving tray without wobbling.Serving tip: Sprinkle the graham cracker crumbs right before setting out the platter so they stay crisp and do not soften against the cream.Make-ahead: The cream cheese filling can be whipped and kept refrigerated in advance, but wash, slice, and assemble the strawberries close to serving to prevent juices from pooling.Nutrition information is an estimate based on common ingredients and serving sizes.
