Equipment

  • Saucepan
  • Large bowl (for ice bath)
  • Medium bowl
  • Fine-mesh sieve or fork
  • Piping bag or small spoon
  • Serving platter

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt to taste
  • Freshly ground black pepper to taste
  • Paprika, for garnish

Instructions

Cook the Eggs Perfectly

  • Place the eggs in a saucepan in a single layer. Add enough cold water to cover them by about 1 inch.
  • Bring the water to a full rolling boil over high heat. Once boiling, immediately cover the pan, remove it from the heat, and let the eggs stand for 10-12 minutes.
  • While the eggs stand, prepare a large bowl of ice water. Use a slotted spoon to transfer the cooked eggs to the ice bath and let them cool completely for at least 10 minutes.

Prepare the Creamy Yolk Filling

  • Carefully peel the cooled eggs and slice each one in half lengthwise. Gently pop the yolks out into a medium bowl.
  • Mash the yolks with a fork until they form a fine crumble. For an extra smooth filling, press the yolks through a fine-mesh sieve.
  • Add the mayonnaise, Dijon mustard, and white vinegar to the yolks. Stir until the mixture is smooth and creamy.
  • Season the filling with salt and freshly ground black pepper to taste. The filling should be boldly seasoned to balance the egg white and toppings.

Fill the Eggs and Set Up the Flight

  • Spoon or pipe the yolk filling evenly into the egg white halves.
  • Garnish the filled eggs with a light sprinkle of paprika.
  • Arrange the deviled eggs on a large platter. Place small bowls of assorted toppings around the eggs, such as crumbled bacon, chopped chives, chili crisp, or hot honey, and let guests build their own.

Notes

Pro Tip: For an exceptionally smooth and velvety filling, press the cooked egg yolks through a fine-mesh sieve before mixing them with the other ingredients.
