Equipment

  • Dressing Shaker
  • Salad bowl

Ingredients

Salad

  • 2 (15-ounce) cans chickpeas (drained and rinsed)
  • 1/2 cup red onions (finely diced )
  • 4-5 (~2 cups) Persian cucumbers (thinly sliced)
  • 1/4 cup parsley (chopped )
  • 1 tablespoon dill (minced)
  • 3-4 tablespoons mint (chopped )
  • 2 handfuls arugula (optional)
  • 6 ounces feta cheese (cubed or crumbled)

Dressing

  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons fresh oregano (chopped )
  • 1 tablespoon honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

SALAD

  • Place the dried chickpeas, drained red onion, sliced cucumbers, parsley, dill, mint, and optional arugula in a large salad bowl, leaving the feta aside for now. The herbs should smell fresh and evenly distribute through the cucumber slices.

MAKE THE DRESSING

  • Whisk the olive oil, lemon juice, fresh oregano, honey, kosher salt, and black pepper in a bowl, or shake them in a sealed jar. The dressing should look lightly blended and smell lemony with a warm oregano finish.

TOSS IT TOGETHER

  • Pour the dressing over the salad and toss gently until the chickpeas and cucumbers are coated, then fold in the feta. The feta should remain chunky rather than smearing into the dressing; taste and adjust the seasoning if needed.

Notes

Onion tip: Soak the finely diced red onion in cold water for 10 minutes, then drain it well before adding. This softens the harsh raw bite while preserving the crunch.
Texture tip: Rinse the canned chickpeas until the liquid is gone, then drain and dry them thoroughly with a clean towel. Excess moisture is the fastest route to a watery dressing.
Storage: For the best texture, store the chopped vegetables and chickpeas separately from the dressing. Do not add arugula or spinach to stored portions, as tender greens wilt quickly once they meet lemon juice and salt.
Vegan option: Leave out the feta and use diced avocado or vegan cheese for creaminess. Swap the honey for maple syrup, and add the avocado near serving time to prevent browning.
