Ingredients
- 1 pound ground beef
- 1 diced onion
- 1 diced green bell pepper
- 15 ounces black beans
- 1 ounce taco seasoning
- 1 cup salsa
- 8 large flour tortillas
- 2 cup shredded Mexican cheese blend
Brown the Beef and Build Flavor
Preheat your oven to 425℉ to ensure the pan is hot enough to crisp the tortillas immediately upon contact.
In a large skillet over medium-high heat, brown 1 pound of ground beef with the diced onion and diced green bell pepper for approximately 8 minutes until the meat is fully cooked.
Stir in 1 teaspoon of Worcestershire sauce and 1 tablespoon of tomato paste, cooking until the paste becomes fragrant and darkens slightly to enhance the savory depth.
Simmer the Filling So It Stays Crisp
Carefully drain any excess fat from the skillet to prevent the tortillas from becoming soggy.
Stir in the black beans, taco seasoning, and salsa. Simmer for about 5 minutes until the mixture thickens and the flavors are well combined.
Sheet Pan Assembly and Baking
Lightly coat a baking sheet with non-stick spray and arrange 6 tortillas around the edges so they hang over the sides, with one additional tortilla in the center to cover the base.
Evenly distribute the beef and bean mixture over the tortillas, then top with the shredded Mexican cheese blend, ensuring you reach the very edges for a good seal.
Place the final tortilla in the center, fold the overhanging edges inward to enclose the filling, and spray the top lightly with cooking spray.
Place a second baking sheet on top to press the quesadilla flat and bake for 20 minutes.
Remove the top baking sheet and bake for another 10 to 15 minutes until the exterior is golden brown and crisp. Let it rest for a few minutes before slicing into squares.
Crunch Tip: To avoid a soggy bottom, always simmer your filling for at least 5 minutes to reduce moisture from the salsa and drain the beef thoroughly before assembly.
Cheese Tip: For the smoothest melt, use freshly grated cheese from a block. Pre-bagged shreds often contain anti-caking agents that can interfere with a creamy texture.
Safety Tip: Ensure your beef mixture reaches an internal temperature of 160°F before you begin assembling the sheet pan to guarantee food safety.
Storage Tip: Store leftovers in an airtight container for up to 3 days. Reheat in a dry skillet or an air fryer at 350°F for 3 to 4 minutes to restore the original crunch.
