Equipment

  • Slow cooker
  • Skillet

Ingredients

  • 3 Cups whole kernel corn
  • 2 jalapenos, seeded and diced
  • 1 Cup Colby Jack cheese, shredded
  • 2/3 Cup sour cream
  • 8 Ounces cream cheese, cubed
  • 6 Slices bacon, cooked and chopped
  • 1/4 Cup cilantro, chopped
  • 1/4 Cup queso fresco
  • 1 lime, half juiced, half cut into wedges
  • corn chips, to serve

Instructions

Char the Corn

  • Set a dry skillet over medium-high heat and add 1 1/2 cups of the corn in an even layer. Cook for 3 to 5 minutes, stirring occasionally, until the kernels are deep golden with charred edges.

Build the Slow Cooker Base

  • Transfer the charred corn to the slow cooker. Add the remaining corn, diced jalapenos, shredded Colby Jack, sour cream, and cubed cream cheese.
  • Give the ingredients a gentle stir to ensure they are evenly distributed, particularly around the edges of the pot.

Cook Low and Stir Occasionally

  • Cover and cook on Low for 2 hours. Stir every 45 minutes to help the cheese melt smoothly and prevent the edges from catching or scorching.

Finish and Serve

  • Stir in most of the chopped bacon, leaving a small amount for garnish. The dip should be thick, creamy, and glossy.
  • Top with the reserved bacon, cilantro, and crumbled queso fresco. Squeeze fresh lime juice over the top and serve warm with corn chips or tortilla scoops.

Notes

Texture Tip: Always use full-fat cream cheese for this recipe. It provides the most stable, velvety texture that won't turn soupy during the long cooking time.
Prevention Tip: Switch the slow cooker to the Warm setting as soon as the dip is bubbly and fully melted to avoid scorching the bottom or causing the dairy to separate.
Serving Suggestion: Use sturdy dippers like corn chip scoops or thick-cut tortilla chips. Delicate chips often snap under the weight of this hearty, corn-filled dip.
Troubleshooting: If the dip appears greasy or separated, stir in one tablespoon of warm milk. This helps emulsify the fats and restores a glossy, creamy consistency.
