- 1 1/2- 2 pounds boneless, skinless chicken breasts
- 2 cans cream of chicken soup, 10.5 oz each (or boxes)
- 1-2 tsp dried parsley
- ½ tsp seasoned salt
- ¼ tsp poultry seasoning
- ¼ tsp garlic powder
- 1/2 stick butter, sliced
- 3 1/2 cups chicken broth
- 8 oz. egg noodles, uncooked
Arrange the chicken breasts in the crockpot, then spread the cream of chicken soup over the top and sprinkle on the parsley, seasoned salt, poultry seasoning, and garlic powder. The chicken does not need to be fully submerged, and the seasonings should be spread out so the flavor builds evenly as it cooks.
Add the sliced butter and pour in the chicken broth, then cover and cook on low for 5-6 hours or on high for 3-4 hours. The chicken is ready when it’s fully cooked and shreds easily with two forks, and the pot should smell rich and savory.
Lift the chicken out, shred it into large pieces, and return it to the crockpot. At this stage the sauce may look thin, but trust the process because the noodles will thicken it as they cook.
Stir in the egg noodles, cover again, and cook for 30-45 minutes more until the noodles are tender. The final texture should be creamy and thick, with soft noodles that still hold their shape instead of turning mushy.
Sauce Consistency: If the sauce seems too thin, let it cook with the lid off for a bit. If it gets too thick, just stir in a splash of hot chicken broth or water to loosen it up.
To Prevent Mushy Noodles: Add the dry egg noodles only during the last 30-45 minutes of cooking. Adding them earlier will cause them to overcook and fall apart.
Storage and Reheating: The dish will thicken as it cools. Store leftovers in an airtight container in the refrigerator. Reheat gently, adding a splash of broth or milk to restore the creamy consistency.
