Add the medium-density vegetables, then drizzle in the oil and toss until everything shines. Sprinkle in the dried herbs, garlic powder, black pepper, and only 0.25 teaspoon of the pink salt, then toss again until the seasoning looks evenly freckled over the surfaces.
Roast hard, then finish with reverse-salting
Carefully pull the hot baking sheet from the oven and spread the vegetables out in a single, uncrowded layer. If you hear a lively sizzle, you’re right where you need to be.
Roast for 15 minutes, then pull the pan out and toss the vegetables so new sides meet the hot metal. Return to the oven right away so the heat stays aggressive.
Roast for another 15 to 20 minutes, tossing once more halfway through, until the edges are deeply browned and the centers feel tender when pierced. You’re looking for caramelized corners and a toasty, almost sweet aroma.
Immediately move the vegetables to a wire cooling rack and let them rest for 1 to 2 minutes. This quick pause lets steam escape instead of softening the crust on the pan.
Right before serving, sprinkle on the remaining 0.75 teaspoon of coarse pink Himalayan salt. The contrast should be obvious, hot, crisp vegetables with cool, crunchy salt crystals on top.
