Equipment

  • Slow cooker
  • Cast Iron Skillet
  • Forks for shredding

Ingredients

  • 1 (3 pound) beef chuck roast, trimmed
  • 1/2 medium onion, diced
  • 1/2 cup dark brown sugar
  • 1/3 cup soy sauce
  • 10 cloves garlic
  • 1 medium jalapeno pepper, diced
  • 1 (1 inch) piece fresh ginger root, peeled and grated
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon sesame oil
  • salt and ground black pepper to taste
  • 16 (6 inch) corn tortillas

Instructions

Build the slow-cooker flavor base

  • Set your slow cooker on the counter and lay in the trimmed chuck roast so it sits flat. Scatter the diced onion over it.
  • Add the dark brown sugar, soy sauce, garlic, jalapeño, grated ginger, seasoned rice vinegar, and sesame oil. Season with salt and ground black pepper, then nudge the ingredients around so the roast is well coated.

Slow cook until shreddable

  • Cover and cook until the beef is fork-tender, about 10 hours on Low or 8 hours on High, aiming for an internal temperature of 205°F.

Shred, soak, then crisp

  • Move the roast to a cutting board and let it rest for a minute, then shred with two forks into bite-size strands, pulling with the grain then across it.
  • Return the shredded beef to the slow cooker and stir it into the juices. Let it sit for 20 minutes so the meat reabsorbs the flavorful soy-sesame glaze.
  • Heat a cast-iron skillet over high heat. Add the beef in small batches with a splash of cooking liquid, letting it sizzle undisturbed until the edges turn dark, crisp, and caramelized.

Warm tortillas and assemble

  • Warm the corn tortillas with a quick toast for a little char, then pile in the crispy beef and serve immediately.

Notes

Tortilla Preparation: Briefly toast corn tortillas before serving so they stay flexible and strong under the juicy beef.
Flavor Absorption: Always let the shredded beef sit in its cooking juices for 20 minutes; this step is essential for the meat to reabsorb the seasoning and moisture.
Searing Success: Crisp the beef in small batches to ensure a proper sear. Overcrowding the skillet will cause the meat to steam instead of caramelize.
Trimming Tip: Removing the silver skin and hard fat before cooking ensures the sauce remains glossy and the bites are consistently tender.
