Ingredients

Salad:

  • 2 lbs Boneless Chicken Thighs
  • 2 cups Shredded Green Cabbage
  • 1 cup Shredded Red Cabbage
  • 0.5 cup Shredded Carrots
  • 0.5 cup Sliced Red Onion
  • 0.25 cup Picked Mint Leaves
  • 0.25 cup Picked Cilantro leaves
  • 0.25 cup Chopped Roasted Peanuts
  • 1 tbsp Fried Shallots

Nước Chấm Dressing:

  • 1 cup Coconut Water
  • 0.25 cup Lemon Juice
  • 0.5 cup Son Fish Sauce
  • 2 tsp Minced Ginger
  • 2 tsp Minced Garlic
  • 2 tbsp Minced Shallot
  • 2 tsp chrouk metae [fermented chili paste]
  • 3 tbsp Organic Sugar

Instructions

Poach the Chicken Thighs

  • Brine the chicken in a simple saltwater bath, use 4 cups water mixed with 2 tbsp Kosher Salt, and let the 2 lbs Boneless Chicken Thighs sit for 5 minutes so the meat stays juicy even when served cold.
  • Rinse thoroughly, then set the chicken aside while you prepare the pot, this quick rinse keeps the seasoning balanced and not overly salty.
  • Fill a medium-size pot with cold water, then add 1-2 slivers of ginger, 1 tsp Kosher Salt, and 1 tbsp Son Fish Sauce, the water should smell lightly fragrant and savory.
  • Slide in the chicken thighs, then bring the pot to a simmer, look for gentle bubbles and a calm surface, not a rolling boil.
  • Turn the heat down to medium and cook for 15 minutes, or until the chicken's internal temperature reaches 165°F for 5 seconds, the meat should look opaque and feel springy when pressed.
  • Let the Poached Chicken Thighs cool down to ambient temperature for 1 hour before shredding, this resting time keeps the juices in the meat instead of on your cutting board.

Shred and Double-Dress the Chicken

  • Hand-shred the cooled chicken into bite-size strands, I like the rough, jagged edges because they hold onto Nuoc Cham like little flavor pockets.
  • In a separate bowl, toss the shredded chicken with 3 tbsp of the prepared dressing until every strand looks lightly glossy and smells sweet-savory.
  • Store the dressed chicken in the refrigerator when not using, chilling it now makes the final salad taste extra crisp and refreshing.

Make the Nước Chấm Dressing

  • Mince the ginger, garlic, and shallot until fine and juicy, not chunky, you want them to disappear into the dressing while still perfuming it.
  • In a mixing bowl, combine 1/4 cup Lemon Juice, 2 tbsp Minced Shallot, 2 tsp Minced Garlic, and 2 tsp Minced Ginger, the aroma should be sharp and bright.
  • Transfer that mixture to a separate bowl, this makes it easier to fully dissolve the sugar without bits sticking to the sides.
  • Add 1/2 cup Son Fish Sauce, 1 cup Coconut Water, and 2 tsp chrouk metae [fermented chili paste], then stir until the color looks evenly blended and the heat smells toasted and lively.
  • Add 3 tbsp Organic Sugar and mix until fully dissolved, the dressing should taste like a tight balance of sweet, sour, and salty, with a gentle burn that comes at the end.

Purge the Cabbage and Assemble the Salad

  • Right before mixing, do the Cabbage Purge, gently massage the shredded green and red cabbage with a pinch of salt, let it sit for 10 minutes, then gently squeeze it dry so it feels crisp, not wet.
  • In a large salad bowl, combine the double-dressed shredded chicken, purged cabbage, 1/2 cup Shredded Carrots, 1/2 cup Sliced Red Onion, and the herbs, the bowl should already smell cool and fresh.
  • Pour in the remaining dressing and toss to combine until everything looks lightly coated, not swimming, you want sheen and fragrance, not puddles.
  • Finish with the garnishes, scatter Picked Mint Leaves, Picked Cilantro leaves, Chopped Roasted Peanuts, and Fried Shallots on top so every bite gets crunch and aroma.

Notes

Make-Ahead Tip: Keep the purged cabbage, the double-dressed chicken, and the Nuoc Cham stored separately in the refrigerator. Assemble them right before eating to prevent the cabbage from softening.
Texture Tip: Always hand-shred your cooked chicken rather than using a knife. The uneven edges grab onto the dressing much better than smooth cuts.
Ingredient Swap: If you cannot source Rau Ram, a mix of regular mint and cilantro is the easiest substitute. Adding extra mint will help mimic its sharp bite.
