  • 1 large egg
  • 1/2 cup flour

Prep the Potatoes for the Right Texture

  • Wash and peel the potatoes, then send them through a food processor for at least 2 minutes. You are aiming for mostly fine potato with a little bit of coarser shred mixed in, so the pancakes fry up crisp at the edges but still feel substantial.
  • Tip the grated potato into a clean dish towel or cheesecloth and wring with real force until it feels almost dry and fluffy. Let the squeezed liquid sit in a bowl for 10 minutes, then gently pour off the water and scrape the white potato starch from the bottom back into the potatoes.

Mix the Batter

  • Scrape the dried potatoes into a mixing bowl and add the egg, flour, salt, and black pepper, plus the reserved potato starch. Stir with a rubber spatula until everything looks evenly coated and slightly sticky, with no dry pockets of flour.

Fry Until Deep Golden and Crisp

  • Set a sauté pan or ideally a cast iron skillet over medium heat, then add the olive oil. Heat the oil to exactly 350F (175C), it should shimmer and feel lively, not smoking.
  • Ladle in a dollop of batter and gently flatten it into a pancake, then cook four at a time so the pan stays hot. Fry for 3 minutes on each side, until the surface is richly browned and the edges look lacy and crisp.
  • Keep adding batter until it is all used up, letting the oil come back to temperature between batches if needed. You will smell a toasty, potato-forward aroma when the browning is right.

Finish and Serve

  • Plate four pancakes and butter each one, or omit for dairy-free. While they are still audibly crisp, pour maple syrup on top, or go the traditional route with applesauce and a dusting of powdered sugar.
