Mix the Creamy Filling and Stuff

  • In a bowl, blend the cream cheese and shredded sharp Cheddar until the mixture looks smooth, thick, and evenly spreadable.
  • Spoon the filling into each jalapeño half and level it with the edges. A flat top helps prevent cheese blowouts in the oven.

Wrap, Arrange, and Roast

  • Press each stuffed half back together to re-form the pepper, then wrap it with one slice of bacon. Keep the wrap snug but not tight to allow for bacon shrinkage.
