  • 120 g sliced frozen strawberries
  • 1 cup frozen raspberries
  • 1/4 cup milk of choice or canned coconut milk
  • 1 1/2 tsp sugar or sweetener of choice
  • 2 tsp lemon juice
  • 1/16 tsp salt

Blend the base until velvety

  • Add the frozen strawberries, frozen raspberries, milk, sugar, lemon juice, and salt to your blender. Start with a few short pulses to crack the frozen fruit, then blend until the mixture looks uniformly pink and glossy, with no visible icy pebbles.

Firm it briefly, then pipe the classic swirl

  • For a sturdier, pipeable texture, scrape the mixture into a plastic freezer bag and freeze for ten minutes. It should feel like a thick, squeezable mousse when you press the bag.
  • Snip a small corner off the bag and squeeze into a bowl in a spiral, keeping steady pressure so the ridges stack into that tall soft-serve look.

Optional: use a frozen fruit soft-serve machine

  • If you own a frozen fruit soft-serve machine, the frozen fruit can be processed directly through it. The texture comes out extra airy, almost like it was spun in a resort kitchen.

Notes

Bowl Temperature: Freeze your serving bowls for 15 minutes before serving so the whip doesn't melt on contact.
Blending Strategy: Pulse first, then blend. Short bursts keep the mixture colder and thicker, which is essential for maintaining that classic soft-serve structure.
Storage Tip: This treat is best enjoyed immediately. If you need to store it, keep it in the freezer and let it sit on the counter for 10 to 15 minutes before re-blending to restore the fluffy texture.
