  • 1/2 cup sugar

Bloom the Pumpkin and Spice

  • Warm the pumpkin puree with the pumpkin pie spice in a small skillet for 2 to 3 minutes, stirring constantly, until it smells like pumpkin pie filling and looks slightly darker and glossier. Let it cool slightly so it blends in smoothly without warming the dairy.

Whip the Eggs and Dissolve the Sugar

  • Crack the eggs into your blender and blend on medium for 1 minute, until the mixture turns pale and foamy, like a light cappuccino froth.
  • Turn the blender to the lowest setting and add the sugar gradually, 1 to 2 tablespoons at a time, so it doesn’t clump at the bottom. Once it is all in, blend on medium for 1 minute, until the sound of the blender smooths out and the mixture looks glossy rather than grainy.

Blend the Creamy Base, Then Chill

  • Turn the blender back to the lowest setting and add the bloomed pumpkin mixture, whole milk, and heavy cream. Blend just until everything looks silky and evenly tinted a soft pumpkin shade, with no visible specks.
  • Pour into an air-tight container, Mason jars are ideal, then refrigerate until fully chilled, at least 4 hours if you want the best flavor and the prettiest, thickest pour.
