Ingredients
 

  • 3/4 cup unsweetened almond milk, or other milk of choice
  • 2 tbsp chia seeds
  • 1 scoop chocolate vegan protein powder
  • 2 tbsp cocoa powder
  • 2 packets stevia or liquid stevia drops to taste, or 1 tbsp maple syrup

Instructions
 

Build the Base

  • Pour the almond milk into your blender first. Add the chia seeds and ripe avocado, if using. Blend for about 30 seconds until the avocado is broken down and the mixture is smooth.
  • Add the chocolate protein powder, cocoa powder, and your sweetener of choice to the blender.

Blend Until Velvety

  • Blend again until the pudding is completely smooth, thick, and uniform in color. If the mixture is too stiff, add a splash more milk and blend until creamy and glossy.

Chill and Set

  • Spoon the mixture into a jar or bowl. Refrigerate for at least 60 minutes, or overnight for the best texture. For an even creamier result, give the pudding a good stir after 30-60 minutes of chilling, then return it to the fridge to finish setting.

Notes

Texture Tip: For an ultra-silky, mousse-like texture, blend in about 1/4 of a small, ripe avocado. It makes the pudding incredibly creamy with no avocado taste. If you prefer a classic, tapioca-like texture, you can whisk all ingredients (except avocado) in a bowl instead of blending.
Pro Tip: Enhance the flavor by using a chocolate protein powder you genuinely enjoy. Adding a pinch of sea salt and a splash of vanilla extract will also make the chocolate taste richer and more complex.
Storage: Store the pudding in an airtight container in the refrigerator for up to 5 days. It can also be frozen for up to 1 month; thaw overnight in the fridge and stir well before serving.
