Ingredients
 

  • 1 cup 1% - 2% cottage cheese
  • 1/2 cup softened plain cream cheese
  • 1/4 cup plain Greek yogurt
  • 3/4 tsp dried dill
  • 1 1/4 tsp onion powder
  • 1 1/4 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 pinch pepper or chili flakes
  • 1/4 cup roughly chopped fresh dill
  • 3/4 cup diced dill pickles

Instructions
 

Brine Bloom the Seasonings

  • In a small bowl, combine 1 tablespoon of warm pickle brine with the dried dill, onion powder, and garlic powder. Whisk together and let the mixture sit for 5 minutes to hydrate the dried herbs and intensify the flavor.

Blend the Creamy Base

  • Place the cottage cheese, softened cream cheese, and Greek yogurt into a food processor or blender. Process on high for 1 to 2 minutes, scraping the sides as needed, until the mixture is glossy and completely smooth with no visible curds.
  • Transfer the blended dairy base to a clean mixing bowl.

Season, Fold, and Chill

  • Stir the bloomed spice paste into the creamy base along with the kosher salt, pepper or chili flakes, and the chopped fresh dill.
  • Gently fold in the diced dill pickles using a spoon or spatula until they are evenly distributed, taking care not to mash the pickle pieces.
  • Cover the bowl and refrigerate for 15 to 20 minutes to allow the flavors to meld and the texture to firm up.

Garnish and Serve

  • Spoon the chilled dip into a serving bowl. Top with extra fresh dill, chopped pickles, and crushed chips or crackers before serving with your favorite dippers.

Brine Bloom Secret: Always use warm brine to bloom your dried spices. This hydrates the dill and garlic, preventing a gritty texture and ensuring the flavor is bold rather than dusty.
Temperature Matters: Ensure your cream cheese is fully softened at room temperature before blending. Cold cream cheese creates tiny lumps that are difficult to remove even with high-speed blending.
Storage Tip: This dip stays fresh in an airtight container for 3 to 5 days. If it releases a little moisture, simply give it a quick stir to restore the emulsion.
