Instructions
Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin with nonstick spray or butter.
On a lightly floured surface, unfold puff pastry and roll to smooth the seams. Cut into 24 squares.
Press one square into each muffin cup, forming pastry wells with corners slightly sticking out.
Place a cube of brie in each pastry well.
Mix cranberry sauce with orange zest and rosemary. Spoon 1 tsp over each brie cube.
Top with chopped nuts if using. Brush pastry edges with egg wash.
Bake for 12–15 minutes until golden brown and bubbly. Let rest 5 minutes before serving. Drizzle with honey or maple syrup and sprinkle flaky salt if desired.
Notes
Freeze unbaked bites for up to 2 months and bake from frozen, adding 3–5 minutes. Use jam substitutes like fig or cherry. Avoid microwaving to reheat for best texture.
