Ingredients
 

Dressing

  • 1/3 cup avocado oil or other vegetable oil
  • 1/3 cup seasoned rice vinegar
  • 1 lime, juiced
  • 3 cloves garlic, minced
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 1/4 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle pepper

Caviar

  • 2/3 cup finely diced red onion
  • 1 1/2 cups diced fresh bell peppers
  • 1/3 cup diced jarred roasted red peppers
  • 1/3 cup diced pickled jalapeño peppers
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can black eyed peas, drained and rinsed
  • 2 cups frozen corn
  • 1 cup diced fresh tomato
  • 1/2 cup chopped fresh cilantro

Instructions
 

Mix the Smoky Vinaigrette

  • In a large bowl, whisk together the avocado oil, seasoned rice vinegar, lime juice, minced garlic, garlic powder, salt, sugar, ground cumin, smoked paprika, and chipotle until the dressing is glossy and well combined. Let the mixture sit while you prepare the vegetables to allow the spices to bloom.

Tame the Onion, Then Build the Bowl

  • Place the finely diced red onion in a mesh strainer and rinse under cold water. Drain it thoroughly to remove the sharp sulfur bite.
  • Add the bell peppers, roasted red peppers, pickled jalapeños, black beans, black-eyed peas, corn, and diced tomato to the bowl containing the vinaigrette. Fold the ingredients gently until everything is evenly coated.

Marinate for That Potluck Perfect Flavor

  • Stir the rinsed red onion into the mixture. Cover the bowl and place it in the refrigerator to marinate for 2 to 12 hours. Toss the mixture occasionally to ensure the dressing continues to coat the beans and vegetables.

Finish with Cilantro and Serve

  • Immediately before serving, stir in the fresh cilantro so it remains vibrant and green. Taste the dip and add an extra pinch of salt if needed for a final flavor lift. Serve chilled with sturdy tortilla chips.
