For the Cupcake:

  • 12 Dr. Oetker Rainbow Cupcake Cases
  • 125 g Margarine
  • 125 g Caster Sugar
  • 2 Medium Eggs
  • 1 tsp Dr. Oetker Madagascan Vanilla Extract
  • 40 g Dr. Oetker Fine Dark Cocoa Powder
  • 30 ml Semi-Skimmed Milk
  • 12 Oreo Biscuits
  • 125 g Self-Raising Flour

For the Buttercream:

  • 200 g Unsalted butter
  • 400 g Icing Sugar
  • 1 tsp Dr. Oetker Madagascan Vanilla Extract
  • 1 Dr. Oetker Blue Food Colour Gel

For the Decoration:

  • 12 g Mini Chocolate Chip Cookies
  • 24 Edible Eyes

Instructions
 

Prep and Pan Setup

  • Preheat your oven to 180°C (160°C Fan or Gas Mark 4). Line a 12-hole muffin tray with the cupcake cases, ensuring they sit flat for an even rise.

Mix the Chocolate Cupcake Batter

  • In a large mixing bowl, cream together the margarine and caster sugar until the mixture is pale and airy.
  • Add the eggs, vanilla extract, self-raising flour, cocoa powder, and milk. Mix the ingredients until the batter is smooth, glossy, and shows no dry streaks.

Add the Oreo Surprise and Bake

  • Fill each cupcake case about 1/3 full with batter. Press one Oreo biscuit into the center of each case, then cover with the remaining batter.
  • Bake for 15 to 20 minutes until set. Let the cupcakes cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.

Whip the Blue Buttercream and Decorate

  • Whip the unsalted butter for 5 minutes until fluffy. Gradually beat in the icing sugar, vanilla, and blue food colour gel until the frosting is uniformly royal blue.
  • Pipe a generous swirl of frosting onto each cooled cupcake. Insert a mini chocolate chip cookie for the mouth and finish with two edible eyes placed slightly unevenly for the classic character look.

Safety Tip: Use food-safe gloves when working with royal blue gel coloring to avoid staining your hands. If stains occur, a mixture of lemon juice and sugar acts as an effective scrub.
