Large Pot
- 1 pound white or russet potatoes, peeled and cut into about 1 inch chunks
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 crushed or minced garlic clove
- 6 oz can of tomato paste
- 1/4 cup Worcestershire sauce
- 1 1/2 cups beef broth
- 4 cups frozen mixed vegetables (carrots, peas, corn, and green beans), thawed
- 1 cup shredded cheddar cheese, divided
- 1/4 cup Greek yogurt or sour cream
- 1/4 cup milk
- 1 teaspoon kosher salt
Prep the Oven and Potatoes
Preheat your oven to 350°F. Lightly coat a 1.5-quart casserole dish with cooking spray to ensure the filling releases easily.
Place the potato chunks in a pot of cold salted water. Cover and bring to a boil, then cook uncovered for 10 to 12 minutes until the centers are fork-tender.
Build the Beef Filling
While the potatoes boil, heat a skillet over medium heat. Add the ground beef, chopped onion, minced garlic, and a pinch of salt and pepper. Cook, breaking the meat into crumbles, until the beef is no longer pink and the onions are soft.
Drain all excess grease from the skillet to keep the filling savory and clean.
Stir in the tomato paste, Worcestershire sauce, and beef broth. Add the thawed mixed vegetables and simmer for 10 to 15 minutes until the sauce is glossy and thickened into a spoonable gravy.
Mash and Assemble
Drain the cooked potatoes and return them to the warm pot for a moment to evaporate excess moisture. Add 1/2 cup of shredded cheddar, the Greek yogurt (or sour cream), milk, and 1 teaspoon of kosher salt. Mash until smooth, being careful not to overwork them.
Transfer the beef and vegetable mixture into the prepared casserole dish. Spread the mashed potatoes evenly over the top, sealing the edges completely. Sprinkle the remaining 1/2 cup of cheese over the top.
Flavor Secret: Caramelizing the tomato paste in the pan before adding liquid (a move called pincé) adds a deeper, more savory backbone to the gravy.
Texture Tip: Use a fork to create ridges in the mashed potato topping before baking. These peaks catch the heat and turn into crispy, golden bits.
Make-Ahead Instructions: This casserole can be assembled up to 48 hours in advance. Keep it refrigerated and bake just before serving. You can also freeze it tightly wrapped; just add 15 to 20 minutes to the baking time if cooking from frozen.
Storage: Leftovers keep well in an airtight container for up to 3 days. Reheat in a 350°F oven to keep the topping fluffy.
