Equipment

  • 1 jigger or shot glass
  • 1 bar spoon or butter knife
  • 1 rocks glass
  • 1 muddler or kitchen spoon

Ingredients

  • 6 mint leaves
  • 1/2 ounce ginger honey syrup
  • ice
  • 1/2 lime
  • 6 ounces coconut water (chilled)

Instructions

  • Place the mint leaves and ginger honey syrup in a rocks glass, then press the mint gently with a muddler or the back of a spoon. The leaves should look lightly bruised and smell fragrant, not dark and shredded.
  • Add ice until the glass is about halfway full, squeeze in the juice from the 1/2 lime, and pour in the chilled coconut water. The drink should look clear and icy with little green flecks of mint throughout.
  • Stir well to blend the syrup, lime, and coconut water, then serve right away. When it’s mixed properly, the flavor tastes evenly zesty and the glass feels very cold in your hand.

Notes

Muddling Tip: Bruise the mint gently to release its oils. Overworking it can make the drink taste bitter, so press just until the leaves look lightly bruised and smell fragrant.
Best Flavor Tip: For the sharpest, most refreshing taste, use chilled coconut water and a cold glass. This prevents the ice from melting too quickly and watering down your mocktail.
Make-Ahead Tip: If you're prepping ahead, mix the base (coconut water, syrup, lime) and store it covered in the fridge. Add the fresh mint and ice just before serving to keep the flavor fresh and bright.
