Equipment

  • Large Platter or Bowl
  • Salad spinner
  • Mason jar
  • Skillet

Ingredients

Chicken Cobb Salad Ingredients

  • 6 oz bacon ((6 slices) chopped and browned)
  • 1 medium head romaine lettuce (5 cups chopped, rinsed and dried)
  • 2 cooked chicken breasts
  • 2 hard-boiled eggs
  • 1 large avocado (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup blue cheese (crumbled (or feta cheese or goat cheese))
  • 2 Tbsp parsley (or chives, finely chopped, optional)

Cobb Salad Dressing

  • 3 Tbsp balsamic vinegar
  • 1 Tbsp dijon mustard
  • 1 clove garlic (pressed or finely minced)
  • 1/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  • Cook the bacon by baking, air frying, or sautéing in a skillet, and prepare the hard-boiled eggs while it cooks. Move the eggs into ice water before peeling so they cool quickly and the shells release more easily, and let the bacon drain on paper towel so it stays crisp instead of greasy.
  • Chop the romaine, rinse it well, and dry it thoroughly before spreading it over a shallow platter. The lettuce should look fresh and fluffy, not weighed down with water, because dry leaves hold the dressing much better.
  • Arrange the chicken, quartered eggs, avocado, tomatoes, red onion, blue cheese, and bacon in rows over the lettuce, then finish with parsley. Keep the rows close together and tidy so each ingredient stays visible and every serving gets a balanced mix.
  • Add the balsamic vinegar, dijon mustard, garlic clove, extra virgin olive oil, salt, and black pepper to a mason jar and shake until combined, then drizzle it over the salad just before serving. The dressing should look creamy and slightly thickened, not separated, and it is best added at the last minute to keep the greens crisp.

Notes

Texture Tip: For the best results, use a salad spinner to get the romaine lettuce completely dry. This helps the dressing adhere better. Also, drain the cooked bacon on paper towels to ensure it stays crisp.
Serving Tip: To prevent soggy greens, wait to drizzle the dressing over the salad until just before you're ready to serve it.
Make-Ahead: You can prepare all the components ahead of time and store them in separate airtight containers in the refrigerator. Assemble the salad and slice the avocado right before serving for maximum freshness.
Cheese Variations: If blue cheese isn't your favorite, this salad is also delicious with crumbled feta, goat cheese, or sharp white cheddar.
