Equipment

  • large bowl
  • Small bowl
  • 9x13-inch Pan
  • Food thermometer

Ingredients

  • 1 1/2 lbs. 80/20 ground beef
  • 6 ounce box Stovetop stuffing mix Savory Herbs flavor, or whatever flavor you like
  • 2 large eggs
  • 3 tbsp. milk
  • 3/4 cup ketchup, divided
  • 1/4 cup brown sugar
  • 1 tbsp. Worcestershire sauce

Instructions

Prep the Oven and Build the Base

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, dry stuffing mix, eggs, milk, and 1/4 cup of the ketchup. Use your hands to mix just until everything is evenly distributed. Do not overmix.

Mix the Glaze and Shape the Loaf

  • In a small bowl, stir together the remaining 1/2 cup ketchup, the brown sugar, and Worcestershire sauce until smooth.
  • Lightly spray a 9x13-inch pan. Transfer the meat mixture to the center and shape it into a free-form loaf. Spread the glaze evenly over the top and sides.

Bake and Rest

  • Bake for 55 minutes, or until the center of the meatloaf registers 160°F (71°C) on a food thermometer and the glaze is set and caramelized.
  • Let the meatloaf rest in the pan for 10 minutes before slicing and serving. This helps the juices redistribute, keeping the loaf moist.

Notes

Mixing Tip: Use your hands and mix gently just until the ingredients are combined. Overworking the meat can lead to a dense, tough loaf.
Doneness Tip: For a perfectly juicy and safely cooked meatloaf, use a food thermometer. The internal temperature should reach 160°F (71°C).
Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 4 days. You can also freeze the unbaked, unglazed loaf for up to 3 months; thaw it in the fridge overnight before glazing and baking.
Variations: Try making individual portions in a muffin tin for faster cooking (about 20-25 minutes) and easy meal prep.
