Equipment

  • Stand mixer
  • Spatula
  • waffle maker

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup brown sugar firmly packed
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3 tsp cinnamon
  • 2 eggs, separated
  • 1 3/4 cups whole milk
  • 1/4 cup vegetable oil
  • 1 Tbs vanilla

Instructions

  • Beat the egg whites in a stand mixer on medium speed until they reach soft peaks. The whites should hold their shape but the tips should curl over instead of standing straight up.
  • While the egg whites whip, whisk together the flour, brown sugar, salt, baking soda, and cinnamon in a large bowl. The dry mix should look evenly colored with no streaks of brown sugar or spice.
  • Make a well in the center, then add the egg yolks, milk, vegetable oil, and vanilla and stir until the batter comes together. The batter should look thick but still pourable, and a few small lumps are completely fine.
  • Use a spatula to fold the whipped egg whites into the batter just until combined. Work gently so the batter stays airy and does not lose the volume you just built.
  • Scoop the batter into the waffle maker and cook according to the manufacturer's directions. The waffles are ready when they are deeply golden and the kitchen smells warm and cinnamon-heavy.

Notes

Texture Tip: Avoid making waffles tough by mixing the batter only until combined. A few small lumps are perfectly fine and expected.
For Crisp Waffles: Always preheat your waffle iron fully. Adding batter to a cool iron will steam the waffles, making them soft instead of crisp.
Reheating: To bring back the crisp exterior of leftover waffles, reheat them in a toaster or toaster oven. A microwave will make them soft.
Serving a Crowd: Keep cooked waffles warm and crisp by placing them in a single layer on a wire rack in a 200°F oven while you cook the remaining batter.
