Ingredients

  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp pepper approximately freshly ground

Instructions

  • Measure all of the spices into a small bowl and whisk until fully combined. The finished blend should look evenly reddish brown, with no pale clumps of garlic or onion powder.

Notes

Blooming tip: Stir the seasoning into warm rendered meat fat or oil for 60 seconds before adding broth or tomatoes to release aromatic spice oils and deepen the flavor.
Packet conversion: Use 2 to 3 tablespoons per pound of meat or to replace a standard store-bought packet. Double this recipe when replacing a full commercial packet.
Storage: Store the spice mixture in a sealed airtight jar away from heat, steam, and direct sunlight for up to six months.
