- 1 tablespoon olive oil
- 1/2 medium onion chopped
- 3 cups chicken broth
- 2 (10 ounce) cans Ro-tel diced tomatoes & green chilies with juices
- 1 (14 ounce) can black beans drained & rinsed
- 1 (12 ounce) can corn drained
- 1/2 red bell pepper chopped
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 8 ounces cream cheese (I used Philly) softened
- 2 cups cooked/rotisserie chicken shredded
- Salt & pepper to taste
- Toppings (optional): shredded Mexican cheese blend, avocado, cilantro, tortilla strips, etc.
I start by heating the olive oil in a soup pot and cooking the chopped onion over medium-high heat for 5 minutes. The onion should soften and smell sweet, not brown hard. I look for a steady sizzle and slightly translucent edges.
Next, I add the chicken broth, Ro-tel with its juices, black beans, corn, red bell pepper, chili powder, garlic powder, cumin, and smoked paprika. This is when the pot starts smelling like taco night in the best possible way, and everything gets stirred together before the creamy ingredients go in.
I turn the heat up to high and bring the soup to a boil, then lower it so it simmers gently, uncovered, for 5 minutes. That short simmer helps the vegetables and spices settle into the broth. While it bubbles away, I usually get my toppings ready.
I cut the softened cream cheese into smaller pieces and stir it into the soup until it fully melts. This part takes a little patience. I keep stirring until the broth looks smooth and creamy with no white streaks left behind.
Then I stir in the shredded chicken and let it cook for another 5 to 7 minutes, just until warmed through. I like this final stretch because the chicken picks up the flavor of the broth without drying out or getting stringy.
I finish with salt and pepper, then ladle it into bowls and add toppings as I like. A crunchy handful of tortilla strips or a little avocado on top makes the whole bowl feel complete.
Texture Tip: Let the cream cheese soften before cooking, then cut it into smaller pieces so it melts smoothly into the broth.
Flavor Tip: For a deeper spice flavor, bloom the chili powder, cumin, and smoked paprika with the onions for 30 to 60 seconds before adding the liquids and canned ingredients.
Chicken Tip: Rotisserie chicken is the easiest option, but any cooked shredded chicken works well if it is tender and not overcooked.
Thickness Tip: For a thicker soup, blend 1 to 2 cups of the soup base and stir it back in. To thin it out, add a little more broth gradually.
Storage Tip: Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat gently on the stove or in short microwave bursts, stirring well so the broth stays smooth.
Freezer Tip: This soup can be frozen, but the texture may change slightly after thawing because of the dairy. If possible, freeze part of the batch before adding the cream cheese, then finish it fresh later.
