Ingredients
 

  • 2 cups rolled oats
  • 1 1/4 cups chunky natural peanut butter
  • 1 cup ground flaxseed
  • 3/4 cup honey
  • 3/4 cup dried cranberries
  • 1/2 cup chocolate chips
  • 1/4 cup sliced almonds

Prep your pan and build the base

  • Line a 9x11-inch baking dish with parchment paper, leaving an overhang on the sides to act as handles for easy removal later.
  • In a large bowl, combine the rolled oats, ground flaxseed, dried cranberries, and sliced almonds. Toss thoroughly to ensure the flaxseed is evenly distributed.

Toast, brown, and make a silky binder

  • Toast the oats in a dry skillet over medium heat for about 5 minutes, stirring frequently, until they look lightly golden and smell nutty.
  • Brown one tablespoon of butter in a small pan until it reaches a hazelnut aroma. Add the honey and chunky natural peanut butter, warming gently until the mixture is smooth, glossy, and pourable.

Mix, fold, press, and chill

  • Pour the warm liquid binder over the dry ingredients and stir until every oat is coated and the mixture is sticky and dense.
  • Let the mixture sit until it is no longer hot to the touch, then fold in the chocolate chips so they remain intact.
  • Transfer the mixture to the prepared baking dish. Press down very hard with the back of a spatula or a heavy measuring cup until the surface is flat and tightly packed.
  • Refrigerate the pan for at least 1 hour to allow the honey and fats to firm up. Once chilled, lift out using the parchment handles and cut into 12 even bars.

Notes

The Pressure Principle: Pressing the mixture firmly is critical for structural integrity. Use a heavy object like a cast-iron skillet on top while chilling to ensure the bars do not crumble when sliced.
Temperature Science: These bars are best served fridge-cold. The natural oils in the peanut butter soften at room temperature, so keeping them cold ensures the best chewy texture.
