This caramel banana pecan cake features a tender banana crumb infused with brown butter, a crackly pecan topping, and a rich caramel drizzle. It is the ultimate bakery-style comfort dessert to make at home.

Crumb Topping First
In a medium bowl, stir together the brown sugar, flour, and chopped nuts with a fork until the mixture looks evenly blended.
Pour in the melted butter and work it in with the fork until you get chunky, damp crumbs that hold together when you pinch them, then set it aside so it stays nice and crumbly.
Brown the Butter and Toast the Pecans
Set a small pan over medium heat and add the softened butter, letting it melt and then foam. Keep a close eye as it shifts from pale yellow to golden, and you will smell that nutty, toffee-like perfume when the milk solids start browning.
Stir in the chopped pecans right into that browned butter and toast them for 6-8 minutes, stirring often, until they smell deeply roasted and look slightly darker.
Scrape everything, browned butter and toasted pecans, into a bowl and let it cool completely back to a softened state, not liquid, so it can be creamed properly with sugar.
Mix the Batter with a Light Hand
Pre-heat oven to 350F (180C), then grease and flour an 8 inch cake pan. A springform pan is my favorite here for easy release, and parchment is a lifesaver if you want clean sides.
Sift the cake flour, baking powder, baking soda, and salt into a bowl so the dry mix looks airy and lump-free, then set aside.
Cream the cooled, softened browned butter with the sugar until it looks lighter in color and a bit fluffy. Add the eggs one at a time, mixing until each disappears into the batter before adding the next.
In another bowl, stir together the mashed ripe bananas, vanilla, and room temperature yogurt until smooth and creamy, with only tiny banana flecks.
Add the flour mixture and banana mixture to the butter mixture in alternating additions, starting and ending with the flour. Fold gently with a spoon or spatula just until the batter looks smooth and thick, because overmixing is the fast track to a dense cake.
Layer, Bake, and Finish with Caramel
Spoon half the batter into the prepared pan and spread it to the edges, then sprinkle over half the crumb topping in an even layer.
Add the remaining batter, smooth the top, and finish with the rest of the crumb topping so you get that irresistible crackly, sugary crown.
Bake for approximately 50-60 minutes. Your kitchen should smell like caramelized bananas and toasted nuts, and the cake is ready when the top springs back gently to the touch and a toothpick comes out clean.
Let the cake cool completely before drizzling with caramel topping, so the caramel stays glossy on top instead of soaking in too fast.
